Outta the Airstream and Into a Building: Spork to open in May

Good news, Spork fans: The owners of the popular global-street-food-serving Airstream trailer are moving their operation inside a vacant storefront on Newport Avenue, next door to Cuppa Yo. Co-owner Erica Reilly hopes to be up and running by late May.

Reilly, along with co-owner and chef Jeff Hunt, will continue to serve the worldly street food (grilled pork belly, chanterelle and steak tacos, spicy fried chicken) that made 'em famous but the new spot will also feature rotating specials and a bar (emphasis on classic cocktails). Inside, Reilly said to expect lots of metal and wood, with highlighted with hits of Spork's signature lime green. Open seven days a week (11am-10pm) and featuring counter service, a small patio and on-site parking, this new neighborhood spot should be a new Bend favorite.

Reilly is back in Bend after helping open The Rose, a classic cocktail bar in Jackson Hole. Reilly said she's now inspired to serve old favorites done right—drinks like the Old Fashioned, daiquiris (no blender involved), Mai Thais (not with millions of juices), Tom Collins—these are what make the Spork co-owner happy.

Spork stands to become the second food cart-turned-brick-and-mortar restaurant in Bend's recent past. Street food lunch favorites El Sancho and Soupcon opened Barrio last March after it was clear the pair had the community's support. Now a year old, the Spanish-styled neighborhood restaurant in downtown Bend has become a lunch and dinner favorite.
