Winner of Bite of Bend’s Top Chef competition, chef and co-owner Tim Garling continues to crank out local and seasonal dishes that he and his wife, Kathy, dub Northwest haute cuisine. You’ll have to check their online menu for updates, however, as Garling thrives on variety and experimentation. Slow braised, herb-cured duck leg and thigh, served with roasted red potatoes, brussels sprouts and pickled mustard seeds ($23) and medallions of pork tenderloin braised with apple cider, balsamic vinegar, sun-dried cherries, and fresh chilies and served with potato puree and fresh vegetables ($25) are typical of the offerings at this high-end, but down-to-earth establishment.
