Chef Zachary Mazi will present the known and unknown science of cooking mushrooms, and highlights from mushroom-hunting and cooking retreats. Mazi has been working on collecting information from the far-reaches of academia and research to render the info useful and accessible to the layperson, chef and home cook alike.
