To celebrate Food Waste Prevention Week, Deschutes County will host a hands-on workshop Oct. 7 at Cascade Culinary Institute. The workshop will help local restaurants and food service businesses reduce food waste, conserve resources, and build more sustainable kitchen practices.

The event is presented by the Deschutes County Departments of Solid Waste and Health Services, Cascade Culinary Institute, Strictly Organic, and Love Yourself Nutrition. 

Participants will learn:

  • Strategies to prevent food waste at the source
  • Ways to track and monitor food waste in commercial kitchens
  • Safe practices for donating surplus food to local partners
  • Steps for starting commercial composting programs within city limits

โ€œEvery action to prevent food waste can help create cleaner, more efficient kitchens while supporting a stronger and more sustainable Central Oregon community,โ€ said Jackie Wilson, Community Outreach Coordinator with the department of Solid Waste.

The workshop will also include information from the Oregon Department of Environmental Quality on why food waste prevention matters in Oregon. 

Food waste prevention can help food service businesses save money and support the community. By preventing waste, donating surplus food and composting food scraps, businesses can get more value from the food they buy and reduce disposal costs. These steps can also help feed people in need and support local environmental goals.
