Musseling in on downtown. With so many restaurants biting the dust (Ernesto’s, Kayo’s, etc.) you might think the dining scene here is tanking, but there are several stepping in for the casualties. Gone but not forgotten is Hans, the downtown pastry-shop-turned-fine-dining restaurant. In its place is Ciao Mambo, a fast-paced, lively pasta and pizza eatery.

The Bend Ciao Mambo is the fourth in installment in the growing franchise offered by the Whitefish, Mont. company CM Brands. The other locations are in Whitefish and Missoula, Mont. and Hayden, Idaho.
Ciao Mambo is one of the only downtown franchises, this isn’t to say we don’t have our fair share of chains and franchises. Just take a trip down Third Street; it looks like any other American city with its fast food drive thrus, Applebee’s and Outback Steak Houses. But downtown has been the territory of local restaurateurs and diners who usually eschew the consistent, but mass-produced meals, that most chains or franchises offer. Now, these local spots will have to compete directly with a franchise’s deep pockets and proven model.

Musseling in on downtown. With so many restaurants biting the dust (Ernesto's, Kayo's, etc.) you might think the dining scene here is tanking, but there are several stepping in for the casualties. The elegant little cottage restaurant is tucked in the city's historic downtown neighborhood and offers unique small plates to pair with their ample wine selection. A relaxed ambiance will have you trying all kinds varietals and vintages you never thought you'd get in Redmond. From the fare to the fine wine it's matched with, the prices are reasonable and your taste buds will thank you.

It's a fascinating journey as Pollan illuminates what the act of eating has become and should be required reading for all Americans.

Cooling out with the raw food gang. There is a group of people scattered around the globe that believe raw food is the key to their health. Over the last five years, celebrities like Woody Harrelson and Donna Karan have helped the “Raw Food” movement (as it is now being called) giving rise to a host of restaurants that specialize in “raw” menus.
Many of these folks are the followers of the “mother of raw foods,” Ann Wigmore, a holistic health practitioner, nutritionist, whole foods advocate, and a doctor of Divinity. Also at the forefront of the movement is fellow holistic health practitioner Viktoras Kulvinskas, who brought raw foods into prominence in the early 1990s.
A big part of their teaching is that food loses much of its nutrition once it reaches the chemical reaction most of us call cooking. That happens at approximately 110 degrees for many foods, which is why this has become the magic number among raw foodists. Raw food is defined as anything not heated over 110 degrees.
