Bethlyn Rider is the owner/chef at Global Fusion.

It’s been quite a year for Bethlyn Rider. After transitioning from her successful food cart last fall, she took a big step and opened her own brick-and-mortar Global Fusion over the summer. Since opening, the fusion-focused chef has expanded her hours and offerings (brunch and specialty cocktails, anyone?). Rider is always on the lookout for new flavors and combinations. Below are five of her favorite dishes from around Bend’s bustling food scene.

1) Ceviche at the eastside Hola. Love the crisp flavor with the warm shrimp.

2) Chef Jake’s special sushi rolls of the day at Kanpai. He brings an explosion of flavor smartly together.ย  Creative combos.ย 

3) Pho Viet’s tofu lemongrass salad. Loads of fried tofu in a lemongrass teriyaki dressing with these rice puffs that you can dip into the sauce.

4) McKay’s Cottage’s eggs benedict. Their hollandaise is the best in Bend.ย 

5) El Sancho’s tacos. Simple, cheap, and full of flavor.ย ย

  1. I am gonna say it, Bethlyn is not very friendly and her food is
    Muddled, busy and very inconsistent. I was given a gift certificates from the old owners of 2nd Street Eats and she makes faces and asks how many I have left. That’s some great hospitable warmth and appreciation. The back yard could get tidied up a bit too.
    OVERRATED!!!!

  2. I wish I could say the food was still good here. We came in this weekend & had the brunch Jambalaya & the classic Benedict. This is the second weekend we have come in for brunch this month & Bethlynn’s cooking is just missing the mark. Last weekend we heard her yelling at her poor cook who seemed to really be hustling & the customers around us who got their food from him said their food was fantastic!! In fact I would say the food we have gotten the last few months that has come from the food “cart” is better that what has been coming out of the kitchen. Very unprofessional behavior from Bethlynn & I can say I won’t eat here again based on how she treats her staff.
