If I had to name the one food concept in Bend that is consistently phenomenal yet criminally underrated, it would be Alebrije Oaxaca. For years, it’s been quietly serving up some of the most authentic Mexican food in the region — first from the yard at Bunk +  Brew Hostel downtown and now also from the newer location at Crosscut Warming Hut in the Old Mill. Wherever you discover them, if you haven’t eaten Alebrije, you’re missing out on some of the boldest and most exciting flavors in Central Oregon.

Alebrije (pronounced ah-leh-BREE-heh) is the perfect name for this truck. Alebrijes are brightly colored Mexican folk-art sculptures of fantastical creatures. Adopted from the designs of Pedro Linares López, who suffered from vivid hallucinations during a fever dream, the craft was eventually embraced and adopted by artisans throughout Oaxaca. It’s a fitting name for the trucks, because alebrijes symbolize boundless imagination — a beautiful metaphor for the limitless breadth of flavors you experience after diving into just a few of their dishes.

Owners Hugo Flores and Crystal Jimenez bring decades of kitchen experience to the table, but more importantly, they bring tradition. Flores, originally from Oaxaca city, settled in Bend 20 years ago.

“The recipes are my family’s that have been passed down through generations,” says Flores. While Bend has seen a staggering number of Mexican restaurants and trucks open over the last few years, Alebrije immediately stands apart by offering authentic Oaxacan dishes.

The original trailer at Bunk + Brew features a larger menu than the Crosscut cart, highlighted by the tlayuda: a large, crispy corn tortilla lightly spread with bacon fat (asiento), refried black beans, queso fresco, rich Oaxacan cheese, cabbage, tomato, guacamole and topped with your choice of protein. As far as I know, Alebrije is the only spot in Bend serving tlayudas, and they are just as spectacular as they sound. The crisp tortilla combined with the savory spread of asiento and refried beans gives every bite a crunchy punch that beautifully complements the bright tang of the Oaxacan cheese.

Generational recipes like these are a reminder of why cooking is such a comforting art form.

Beyond the tlayuda, Alebrije offers a mole unlike any other in Bend. The mole enchiladas with birria are a masterclass in contrasting profiles. The rich Oaxacan chocolate base gives the black mole a complex, savory earthiness balanced by a gentle sweetness, which pairs beautifully with the tender, aromatic birria. I’m always on the hunt for a mole that properly balances earthiness without overpowering the protein, so believe me when I say the synthesis of sweet and savory on these enchiladas is what Bend has been missing.

There’s a buoyant freshness to every dish that instills the flavors with a handmade singularity. I’m ride or die for the birria tortas, and not just because the birria is so tender it quite literally melts in your mouth, but also because the fresh telera roll is toasted to a flawless, gentle crunch.

The combination of the fresh, crispy bread, delectable fried cheese and mouth-watering birria is already a delight, but dipping it into the immaculate consommé elevates the dish into an entirely new realm of flavor. Too often in Central Oregon, consommé leans toward a salty, oily mess or becomes too thick and chonky to dip properly. Alebrije’s consommé enhances and elevates the torta without covering up the complexity of the birria.

There’s a delicate balance to the flavors at Alebrije, revealing an artistry in each dish.  Generational recipes like these are a reminder of why cooking is such a comforting art form. You taste the history in these flavors. Nothing is left to chance, but nothing is staid or stagnant, either. The bright, flavor-forward playfulness of their menu proves how vital intentionality is to a great restaurant that encourages repeat visits.
