Stepping into the slice of tranquility created by the owners of Tite Knot Craft Coffee in downtown Redmond, visitors can sit quietly inside or enjoy the lush, grassy garden area outside. The coffee shop opened in 2021 during the pandemic, so customers were forced to order outside at a cart parked behind the building. That turned out to be an unexpected blessing, so owners Lauri and Nick Dahl kept it that way.
“I’ve seen so many interactions happen in line. People waiting in line to order and they’ve never met before and all of a sudden they’re just having a conversation. There’s something about this location in particular that really allows that to happen. Maybe because they’re waiting for good things,” says Lauri.
Tite Knot has four Redmond locations including inside the Dry Canyon Club on NW Hemlock and a southside drive-thru on SW Canal Boulevard that opened in March. The demand for its pastries became larger than the small downtown kitchen could handle, so the Dahls opened The Tite Knot Central Bakery on SW Veterans Way, near Fred Meyer, to the public in November.
“We roll probably about 400 to 500 scones a day,” Lauri says. She started working in restaurants at age 13 and learned the art of gourmet coffee and pastries from a mentor on the east coast.
“We laminate our scones. We hand roll everything and we laminate them like they were croissant dough,” she explains. Scones are offered in blueberry lemon zest, cinnamon roll and cardamom, bourbon, vanilla as well as seasonal flavors. Tite Knot also has biscuits & gravy on the menu along with a variety of recipes using brioche sourdough. But the biggest draw, of course, is the coffee.
“We take our coffee really seriously. We start off with the best equipment that you can get because that makes a huge difference,” Lauri Dahl says. “We have a very unique blend [of coffee]. You can’t get it anywhere else. [Sisters Coffee] roasts it for us.”
Tite Knot has been voted the “Best” by Source readers for years.
“We’re really genuine in what we do. We’re very, very genuine in what we’re offering and I think that strikes a chord with people,” Lauri says, smiling. “It’s about the hospitality of creating these experiences and these spaces for our customers, and I think they know that.”
“Good food and good coffee doesn’t have to be pretentious,” Nick Dahl adds.
