They've tempted us with tapas before. But even the most memorable attempts by Bend restaurants like Fireside Red and Barcelona were sadly short-lived.
Luckily, the Spanish-inspired tradition of tapas is back in town – redefined and gaining momentum thanks to Barrio, the new Spanish kitchen on Minnesota Avenue in downtown Bend.
Tapas are plates of small bites meant to be shared. They're a tradition rooted in Spanish customs – more of a way of living than simply a way of eating.

Little Bites: We Heart Local Food: Two new campaigns will connect buyers with producers
Central Oregon Intergovernmental Council launches “Buy Fresh, Buy Local” this Friday with an early evening kick off at local food haven, Jackson's Corner. The campaign aims to make it easier for people to tell what food at a business is locally produced.
A vintagy looking label should start popping up around the area to help identify what foods are locally produced.
Buy Fresh, Buy Local will also put out a directory. So, if you are looking for goat meat or locally grown basil, you can check the directory and know which grocery stores and restaurants are selling that thing.

And while we're still contending with weather roulette, we have something worth getting excited about – fiddlehead ferns and asparagus.
We're just on the cusp of a very short-lived fiddlehead season, and if you want to take advantage of these tender lovelies you'll have to act fast. Named for their violin scroll shape, fiddleheads are a fern's new growth. In the Pacific Northwest, the fern of choice is the lady fern. On the East coast, the ostrich fern reigns.
It's Time to Revisit Common Table: Scaffolding is down, and a new menu is up
If you haven't been to the Common Table lately, it's worth a visit.
The nonprofit cafe that's dedicated to providing meals for everyone, regardless of their ability to pay, recruited a new chef in November and has made some significant changes.
Matt Matheny, a 27-year-old whose previous experience includes Pronghorn's Chanterelle and the now defunct Tart Bistro, has been slowly retooling the back of the house, and debuted a spring menu the first week of April.
The menu is New American fare with a nod to southern comfort food and, with Matheny at the helm, has taken a turn for the fresher. Many of the items on the menu are now made in-house from start to finish.
Silver Moon Shakes it up
It's been a few months since Tyler West left Silver Moon Brewing for Oakshire Brewing in the valley. So, microcosmos stopped over there week to see how life was shaking out for one of Bend's first and most well-loved breweries under the leadership of new head brewer Brett Thomas.
And holy crap is that guy cranking out the beers.
For starters, Thomas and his new assistant brewer Stuart Long out of Lost Abbey in San Diego are rolling out four new seasonals in the next two weeks, including Epic Trail 2012 – an American wheat, the Imperial Red Bonecrusher, the GetSum Summer Ale – a hoppy wheat beer made with Amarillo and Simcoe hops, and a special summer pilsner.
Something for Everyone: Broken Top Bottle Shop isn't just another pub
Here's the thing about the Ale Café at Broken Top Bottle Shop. Even though it just opened in February, it feels like a place that's always existed here but we're just now discovering it.
The ambiance of the restaurant and pub, located on Pence Lane at the base of College Way, is a cross between eclectic and classic pub. Light maroon and yellow curtains are draped around the large windows, offsetting the feel that the place is inside a retail building, next door to a yoga studio and children's clothing store. The pub vibe is heightened by dark cherry paneling framing rows of gleaming pint glasses backed by black beadboard.
Blast Off From Bond Street: The Astro Lounge is still a star
With so many changes in the downtown dining scene, it can be hard to keep up with who's new, who's who and who has sadly sunk amidst the competition.
So, when I noticed The Astro Lounge had closed the doors of its former digs on Minnesota Avenue, I was happy to hear it had just moved around the corner to Bond Street. After all, who else would make my custom margarita-martini way past midnight, just how I want it, despite a packed bar, five people deep?
The Astro's new locale is even swankier than the original.
Little Bites: Cuisine Crawl: Highlights from the kick-off crawl, more pizza and tacos on the move
Sunday night, April 1, a landmark event took place that I believe will set the bar for culinary events in the future in Bend. With 12 chefs at 11 locations, offering 16 different dishes, The Foodie Crawl was a spectacular success.
The event's participants wound their way through the westside, Old Mill and downtown and quickly developed a camaraderie marked by a common love of food.
As a former chef at Tart, I enjoyed seeing the dishes developed by chefs from some of the town's best restaurants. Trattoria Sbandati hit on all cylinders with their perfectly textured “Polpette” and paired Tuscan Sangiovese. Victorian Café wowed with Mini Sage Duck Benedicts and a blood orange mimosa. Jen's Garden, which set up shop at Ginger's Kitchen, offered a wonderful “Yucatanwich” paired with a Prosecco mimosa.

The Stinking Rose: Unlocking the power of garlic
Garlic was my first love of the kitchen, and totally changed the way I looked at food forever after. I was 12 years old, and my mom's friend was cooking dinner. He was a “real Italian, from New York,” and on the menu that night was linguini and clams, with garlic bread. As he went about the kitchen, creating magic, my task was peeling and chopping the garlic. I was instantly hooked. Thirty years later, with over half of those years spent in kitchens all over the country, I am still hooked.
