A new dinner spot has opened at Tetherow Resort. Coorie, named after a Scottish word meaning “to nestle in” or “take shelter,” is located in the space that was formerly Solomon’s. Seasonal menus inspired by Central Oregon ingredients focus on Pacific Northwest cuisine. Starters on Coorie’s menu include a panzanella salad, beet carpaccio, Rainshadow Farms spring roll and cauliflower elote. Entrees include herb pesto pappardelle pasta, short rib pave`, a mushroom puffed pastry, braised duck and halibut as well as a variety of beef options. The restaurant is led by Executive Chef Tanner Hansen whose experience includes classical French training.

Coorie is currently only open for dinner. Reservations are strongly recommended although walk-ins are welcome based on availability. Other restaurants at Tetherow include The Row, which is a pub open all day and The Café offering breakfast, lunch and pizza at the sports complex. Tetherow Resort also includes a golf course, 50-room hotel, vacation rental homes, a residential neighborhood and an event pavilion.
