Bamboo Sushi has finally opened in downtown Bend after it had originally expected to open last year. The chain on NW Oregon Avenue specializes in certified sustainable sushi. Starters on the menu include miso soup, 7 spice calamari and shishito peppers. There’s an oyster menu as well as a wide variety of sushi and rolls. Other items include crispy rice with salmon, tuna or albacore, tempura, a wagyu burger and a variety of tofu and veggie dishes.

Bamboo Sushi has eight locations in Oregon, Washington, Denver and San Francisco. Initially the Bend location is only open for dinner during weekdays and lunch and dinner on Saturdays. The website indicates it may add a Happy Hour in the future. For now, the restaurant is only taking walk-ins.
