The EMW Fusion food truck is known for its pandos—Korean-style pancake sandwiches—and now they are testing a gluten-free option. For the month of March they have a small batch of gluten-free pandos available. Just ask for them. I went there with a gluten-free friend, Samantha Barsky, to try them. She said the pando was, “perfectly doughy and soft in the middle, yet still crispy on the outside. This in particular was good because doughy and gluten-free are hard to find.” You can find EMW Fusion on Wednesday and Friday at Bridge 99 Brewery until the end of March. After that they’ll head to On Tap, the new food truck lot on the east side of Bend.
