We just got a press release from Spork – the restaurant in an airstream that travels around Bend, serving amazing street food. Well, it looks like Spork isn’t exactly closing for the winter like we thought – instead, they’re starting a series of pop-up restaurant nights.

Pop-up restaurants are a trend that has become an underground phenomenon in restaurant circles in major cities, the most famous probably being LA’s LudoBites. I was not expecting to see a pop-up restaurant in Bend, but leave it to the eclectic Spork folks to surpass our expectations and bring the trend to Central Oregon.

Pop-up restaurants, for those who don’t know, are when a chef takes over another restaurant’s space for a short period of time – from one day to a few weeks – and serves a special menu. Often, the food served is more seasonal, more creative and more obtuse than they’d normally serve at a traditional restaurant. Spork’s pop-up restaurant not only offers a new event this winter, but also elevates Bend’s food scene by bringing the concept to Central Oregon. We can’t wait to see what Spork does for their two-night stint at Cafe Sintra, December 9 and 10. Tickets should go quickly so we recommend buying ASAP here.
